Warning--not a mechanic. But could you have bad or old gas? Mine wouldn't want to stay going because my gas got really old. Once it idled for a few minutes, then things went better.

The enricher on your carb puts out extra fuel until it warms up and shuts off could be bogging due to too much fuel. In colder weather it takes longer for the enricher to fully extend and shut off. Adjust your a/f screw or just let it warm up awhile before you ride I always let mine run until the idle kicks down before I take off.

Adjust the valves and clean the carb and jets.

Idle set too low, dirty air filter, choke not being used correctly. Might not hurt to run some techron cleaner through it, 4 stroke only.

Sounds like dirty fuel delivery. You mention that you purchased it used, which is key here. How long did it sit with fuel in the system before you purchased it? If it sat for any amount of time, then chances are a thin film of varnish formed on the internals of the fuel system. In and of itself, this is normal, but what happens is that when you put a new tank of fuel in, the ethanol on the new fuel acts as a thinning agent and causes that varnish to strip off in chunks which will consequently clog up your system. I'd clean your carb and get some StarTron. StarTron has an enzyme that eats (literally) the varnish in your fuel system. This is how it treats the ethanol in your fuel, not by eliminating it, but by eliminating what actually typically gunks up your system. Here's a link: www.partsforscooters.com/Star-Tron-Fuel-Treatment_2Also, the electric choke on your carb may have failed. These are easy to test and replace. Just pop it off your carb (it's usually held on with one screw) and hook it up to a 12V power source. The element inside should expand out over the course of a few minutes, if it doesn't then your choke is faulty and a replacement might help. www.partsforscooters.com/164-260_electric_choke_assyI hope these ideas help. I'd go with millsc advice: Adjust the valves.

I would do the valves. Every bike that run fine hot but stalls cold usually needs valves adjusted or have a word engine

Thanks guys! I just did a valve adjustment on the Agility 125, bought it used for $650 with 8500km on it, has 12,000 now, used to stall at stops until warm, it goes now! wow, it's quick! and no stalling... nice lil bike, can't wait to see if I get a better top speed...was doing 55mph before... have to wait tho, headlamp went out, waiting for replacement and doing some bodywork (damn gravel!).
P.S. Got it all together, did all repairs and very happy with it now, keeps up on all the roads except high speed highways... top speed of 65 (prob really 60ish because of inaccurate speedo), but plenty of go for what I need.... again, thx for the tips!
