The scooter starts fine, runs fine, but when I give it a normal amount of throttle, it begins to stop or stutter... When I give it a slight amount of throttle, and leave it, it is fine...
Here is a video of me showing you what I mean, that I just recorded today.
Here is what I have tried so far:
Drained the gas, and put new gas in tank.
Tried 3 different carburetors
Any help would be wonderful, thank you!

No mention of checking valve clearance?
If you suspect an ignition gremlin . . replacement resource.
Verify ignition coil spade connectors and ground wire are tight.
Might also test trigger/pickup/pulsar coil.

What do you mean valve clearance? Should I check that?
The scooter has only like 1k miles on it.... I don't think anything would break that quickly...
And where is the ignition coil connectors at? I can't find anything with slide on connectors.

Got some very interesting info for you, if I plug the air intake holes, where the filter is and stuff, and give it full throttle, it seems to work JUST fine.... Then when I remove my hand from where the air is going in, my problem comes back.
Very weird... What could this indicate?

What could this indicate? Is the carb vent port/hose open to atmosphere?

Yes, the vent hose is open, but even with the drain tube on it, it doesn't make a difference.
Its just weird, that when I hold my hand over the air filter (where the air is sucked in to the carb) it runs just fine until I remove my hand.

I'd still go with checking the valves. Make sure they are at the right valve lash.
Also, if you haven't already, make sure you have tuned your carb properly.

Also, just thought of this: make double sure that your spark plug cord is ALL the way on the spark plug. I had problem where I didn't do that, and acted up sort of like you had.

3 carbs, huh. that is confusing, as i have had the e-clip somehow come off of my needle and of course would not lift on throttle and try to die. all air no fuel. that said the first bit (say about a quarter or so) of throttle is all idle or low speed jet and with no load on the engine it seems to rev well as in your vid, after that the vacuum operated main jet needle gets in the picture. something to do with vacuum such as the one line that goes to the carb clogged or broken, or main jet/needle is not allowing the fuel needed for higher revs. so 3 carbs later i'm leaning toward a vacuum issue.

and i forgot to mention that your idol is too high. the rear wheel should not turn when on the center stand while idoling. this will glaze the pads that act as your clutch, meaning that when not on the stand the wheel can't turn yet they are still in contact with the bell and create unwanted heat, wear, glazing and give you a very jerky start after a while because they won't be able to grip as effectively as intended.
