Number have been done some of which allow the scooter to be operated by a paraplegic sitting in a wheelchair. I believe one member set one up some time ago to haul his lawn service equipment. Look up "sidecar racing"
One of the scariest passenger experiences you can have........
These are professionals with only a few holes to hang on with.........
This is the road version of "wing dancing" ( walking on the wing of an airplane during flight )

I'm thinking on making a detachable sidecart to haul groceries, tools and the occasional passenger, not sure if a 150cc GY6 has enough power to deal with a sidecart, specially loaded

For hauling stuff, a trike attachment may be stabler and easier to drive. I saw a homemade one at Home Depot a while back, the owner allowed me to snap a couple of pics, and told me he made it himself:

You will indeed have enough power/torque to build a sidecar...... Kind of like riding two up or being a heavy set rider.....
Now that being said, anything more than a grocery getter at 35/45 MPH will be an issue....
Sounds like a NEAT project IMO.
You maybe better off just hooking up/ building a lightweight trailer though....
Still a cool project and much less work involved.... Just an idea.

Depends on how you load them. The old 150 and 200 Lambretta's in the 1950's were used to haul amazing loads.
