Hey everyone, thanks for taking your time to read my post.
Quick run down.
I own a Zongshen 50cc and I just cleaned my carb, changed my rollers, and the belt. Now the issue I have is... before I made any of those changes.. when I slowed down for a red light and got to a certain speed.. it would idle in an odd way.. meaning when the light would go green and I'd accelerate it would take me a good twenty-30 feet to actually begin to accelerate. I cleaned the carb and it ran great then I shut it off.. for about 20 minutes, and I was back on square 1. I don't know what to do anymore honestly. If anyone could help me, it would be incredibly appreciated.

First thing you want to do is Adjust the Valves, if they are tight and leaking a little they do not want to idle due to loss of compression. Set them both to .003 inchs or Top intake to .003 inchs and Bottom exhaust to .004 inchs.
That should either fix the problem or if you had adjusted the carb before trying to fix the problem to compensate for the tight valves you will have to re-adjust the fuel mixture now that the valves are adjusted. Alleyoop

The top INTAKE is the one with the spring on top close to the seat the bottom where the exhaust is the bottom spring. Here is a video on how-to: Alleyoop
