Performed an experiment yesterday. Rode her for 20 min WOT but didn't shut her off, just slow putted around the parking lot, then turned around and rode home with no problem. As long as I don't shut her off, there is no stalling. Once I kill the ignition and try to start back up and ride hot, Stall stall stall. Let her sit overnight, and I am good again. Have you tried revving a little bit while starting? That's exactly how my scooter acts, but I know my carb is tuned too rich. I have mine tuned rich, it starts up the first time cold easily, but once warm will not start without revving. Runs and does everything great, just needs a little revving to start warm.

OK, Did the valve adjustment, TDC was not where it was supposed to be. When I lined up the T with the protruding metal fin, it was off by just a hair, so I lined up the two small holes on the cam sprocket so that they were even with the engine case and that seemed to do the trick. On the shakedown run it sputtered once and backfired while accelerating and then it was fine. I think I may go back in and double check the clearances, but the valves were so tight that I couldn't even get a piece of paper between them. I am going to adjust the carb because the idle wont stay down, but she is a lot smoother and has more power for sure. Thanks for the advise and encouragement.
