i agree do the valves,,once they "seat" or wear into the seat they are actually receeding into the head exposing more valve stem,,,making them" longer"so the lash gap goes away,,check your gas cap you may have a venting problem,,,run it and when it stalls quickly remove the fill cap if you hear air rush into the tank ,,,,bingo,,,,i would go over all the electrical connections also including all ignition terminations starting at the cdi trigger by the flywheel, and i would also check the intake manifold and carb mounting bolts and nuts

You have spark,,,on a fairly recent rebuild,,,I'd say you have a fuel delivery problem

i would have said valves myself,,,and running jets that turn up white plug is not good,,,,if you change carbs get one with an accelerator pump,,,i use mikuni myself but there's a few out there that will fit the bill

I would think the carb jets are still dirty,,and I would check the carb diaphragm for holes or cracks,,,,,,after all it is 10 years old

as far as the brakes go i'd say you are winding up the cable,,you need to hold the metal tip then adjust,,,,the light situation may be caused by any number of things,,,i think you are correct tho with the ground,,check all the grounds to frame connections

Try a thin shim under the seat latch to give it more room so it will close over the extra thickness
